Curried Chicken Salad

Ingredients
3 cups coarsely-chopped cooked chicken -- (approx 1 lb)
1 cup chopped celery
1/2 cup toasted slivered almonds
1/2 cup white grapes, cut in half
1/2 cup real mayonnaise
2 tablespoons mild or sweet curry powder (or more to taste)
Salt -- to taste
Freshly-ground black pepper -- to taste

Instructions
Combine first 6 ingredients in large bowl. Season with salt and pepper. Toss to blend thoroughly. Let rest in refrigerator for at least 15 minutes for flavors to blend. Serve heaped on lettuce, or makes a great sandwich filling.

This recipe yields 4 servings.
